Chef Bushman’s Shepherd’s Pie

  • 1 lb Ground Beef or Turkey
  • 14 oz. Peas
  • 14 oz. Fresh corn, cut from the cob
  • 2-3 Carrots, chopped
  • 2 Cloves Garlic, minced
  • ¼ Onion, diced
  • 8-10 Small Red Potatoes
  • 16 oz. Cheddar Cheese, grated
  • Caribbean Seasoning to taste

Brown ground beef or turkey over med-high heat. Drain fat. Add Caribbean seasoning, corn, peas and carrots and cook for 5-10 minutes til carrots have softened.

Boil the potatoes in salted water. Mash with garlic, onion, and salt and pepper to taste.

To assemble the pie, add beef mixture to the bottom of a baking dish, top with 8 oz. of grated cheese, add the mash, and then top with the remaining cheese. Bake in a 375° oven until cheese is bubbly and pie is heated through.
